Healthy Bran Muffins
1 1/2 cups whole wheat flour
3/4 cup flax meal (flax seeds ground up)
3/4 cup oat bran
1 cup turbinado sugar (can substitute with 3/4 agave nector and 1/4 date sugar)
2 t baking soda
1 t baking powder
1/2 sea salt
2 t cinnamon
1/ 1/2 cups shredded carrots
2 apples, shredded
1/2 cup raisins
1 cup nuts (walnuts are good)
3/4 cup milk
2 eggs beaten
1 t vanilla
Combine all ingredients until well mixed. Bake in muffin cups at 350 degrees for 15 - 20 minutes.
