Add the onion, carrot, leeks, pancetta, minced garlic, salt, and pepper. Cook until the onion is golden brown and the pancetta is crisp, about 7 minutes. Add tomato paste and stir until dissolved. Add tomatoes and stir, scraping the bottom of the pan with a wooden spoon. Add the spinach, cabbage, beans, herbs, stock, and bay leaf. Press the graham cracker mixture into a pie pan evenly distributing along the bottom and sides.  Bake crust at 350 degrees for 5 minutes.&lt;br /&gt;&lt;br /&gt;Combine cream cheese, eggs, sugar, and vanilla.  Beat until combined and mixture is smooth.  Pour cream cheese mixture into pie crust and bake at 300 degrees for 15 minutes.&lt;br /&gt;&lt;br /&gt;Let cheese cake cool.  Then mix the sugar and vanilla in with the sour cream to top the cheese cake. Cut 2 pieces of parchment paper slightly larger than the pan in width and depth.  Line the pan in a cross-wise fashion. This makes it easy to lift the pastry out of the pan after baking.&lt;br /&gt;&lt;br /&gt;In a medium bowl, mix together the flour, powedered sugar, and butter until butter is well incorporated.  Press the dough into the lined pan and up the sides by at least 1/2 inch.&lt;br /&gt;&lt;br /&gt;Bake for 20 minutes or until the dough is golden.  Remove to a cooling rack.&lt;br /&gt;&lt;br /&gt;For the Filling:&lt;br /&gt;4 eggs beaten&lt;br /&gt;2 cups granulated sugar&lt;br /&gt;4 T regular flour&lt;br /&gt;1 t baking powder&lt;br /&gt;1/2 t salt&lt;br /&gt;4 T lemon juice&lt;br /&gt;2 T lemon zest&lt;br /&gt;&lt;br /&gt;In a medium bowl, mix together the beaten eggs and the rest of the ingredients. Combine water and quinoa in a medium saucepan and bring to a boil. Reduce heat to a simmer, cover and cook until quinoa is tender and all the water is absorbed, 20 minutes.&lt;br /&gt;&lt;br /&gt;Meanwhile, heat olive oil in a large skillet over medium heat.
